Hi, I’m Carmelo

I’m the owner and head chef of Papa Paella and I’m cooking amazing, fresh, healthy and delicious paella served up family style.  

All of Papa Paella’s recipes are infused with Italian flair (my family came from Italy). Crowd favourites are my Chicken and Chorizo, Chilli Beef and Vegetarian/Vegan paella.  You should also come and try my seafood paella, it’s authentic and full of the flavours of Spain.

Papa Paella is the fulfilment of a dream. Before I was cooking full time, I owned a garage until 2014, when inspired by the movie Chef, I took the plunge into a career in cooking, with the support of my family.  

I started out at Enfield Street Market with homemade Italian street food and fresh pasta and then experimented with the fusion of Italian/Spanish flavours to create Papa Paella.  After knocking the socks off of the manager of the St Albans markets, I established a successful stall at the historic St Albans market.  

The city of St Albans has made my business flourish and I love our community. You’ll find me cooking at the market on Wednesday, Saturdays and at most festivals in St Albans. I also cater large parties and events too, you can find more information or book a party on our Events Catering page.
